Sourdough pizza crusts are easy to make, apparently

A slight change to a pizza crust recipe can make all the difference.

Jason Weisberger says sourdough pizza crust doesn’t take much work and by the sounds of things, it doesn’t. He wrote a pizza dough recipe for Boing Boing which his kids and dogs agreed was awesome (the flour was at least).

Here is the original recipe:

  • ¾ Cup warm water
  • 2 tsp yeast
  • 1 tsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 2 Cups Flour
  • Mix the water, yeast and sugar. Let stand 5 minutes. Add oil and salt to mixture, then add to flour. Mix and knead until all the flour is picked up and the dough is the appropriate texture.
  • Let sit 30-60 minutes, or until the dough ball doubles in size. Split in half. Make pizza!

But with the sourdough pizza crust, Weisberger suggests one change:

Substitute 1/4 cup of starter for the 2 tsp of active dry yeast. I will reduce the amount of water I mix the starter into by 2-3 Tbs and add it back as I work the dough if needed.
